Perfect Brown Butter Sage Mashed Potatoes

These one-pot mashed potatoes feature nutty browned butter and crispy sage for a restaurant-quality side dish that’s simple enough for a Tuesday night but fancy enough for a holiday table.

  • 3 pounds Russet potatoes, peeled and quartered
  • 1 cup (2 sticks) unsalted butter, cut into pieces
  • 1215 fresh sage leaves
  • ½ cup heavy cream, warmed
  • ¼ cup whole milk, warmed
  • 2 teaspoons kosher salt, plus more for water
  • 1 teaspoon freshly ground black pepper
  • 3 cloves garlic, smashed (optional)

Instructions

  1. Prep the Potatoes: Peel 3 pounds of russet potatoes and cut them into uniform quarters. Rinse under cold water to remove excess starch.
  2. Boil the Potatoes: Place potatoes in a large pot and cover with cold water by about an inch. Add a generous tablespoon of kosher salt. Bring to a boil, then reduce to a simmer. Cook until a knife slides into the thickest piece with no resistance, about 20-25 minutes.
  3. Drain and Return to Pot: Drain potatoes in a colander. Return the empty pot to the stove over medium heat for 30 seconds to evaporate remaining water. Add potatoes back to the pot and let sit for about a minute, shaking occasionally, to dry them out.
  4. Brown the Butter and Sage: Add ½ cup (1 stick) of the butter to the pot with the potatoes. Turn heat to medium and let butter melt. Add fresh sage leaves. Stir constantly as butter foams and sizzles until milk solids turn golden brown and butter smells nutty, about 3-4 minutes. Do not walk away.
  5. Mash the Potatoes: Remove pot from heat. Use a potato masher to mash potatoes right in the pot with the browned butter and crispy sage until incorporated and no large lumps remain. If using a ricer, rice potatoes into a bowl, then pour browned butter and sage over top and stir gently.
  6. Add Remaining Butter and Dairy: Add remaining ½ cup butter pieces, warmed heavy cream, warmed whole milk, 2 teaspoons kosher salt, and 1 teaspoon black pepper. Mash and stir until smooth and creamy. Taste and adjust seasoning.
  7. Finish and Serve: Reserve a few fried sage leaves for garnish if desired. Transfer to a warm serving bowl, top with reserved sage leaves and a crack of black pepper. Serve immediately.

Notes

Don’t skip drying the potatoes after draining; it helps them absorb butter and cream better. Watch the butter carefully as it browns—it can go from perfect to burnt in seconds. Warm your dairy before adding to prevent gluey potatoes. For a smoother texture, use a ricer for company; a masher is fine for everyday. Salt the boiling water generously to season potatoes from the inside out.
