A creamy, spicy buffalo chicken dip baked inside a hollowed-out sugar pumpkin. This Halloween centerpiece combines tender chicken, melted cheeses, and roasted pumpkin for a sweet-savory twist on a game-day classic.

  • 1 small sugar pumpkin (about 3–4 pounds)
  • 8 ounces cream cheese, softened
  • 1 cup cooked shredded chicken
  • 1/2 cup buffalo wing sauce
  • 1/2 cup ranch dressing
  • 1 cup shredded cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 2 green onions, sliced
  • Salt and black pepper to taste
  • Optional: 1/4 cup cream
  • Optional: 1/2 teaspoon garlic powder

Instructions

  1. Preheat oven to 375°F.
  2. Prepare the pumpkin: Wash the outside thoroughly. Cut a circle around the top stem, angling the knife inward. Remove the lid and set aside. Scoop out all seeds and stringy pulp. Rinse inside with cold water and pat dry. Rub inside with a little salt and set upside down on a paper towel to drain.
  3. Make the filling: In a mixing bowl, combine softened cream cheese, shredded chicken, buffalo wing sauce, ranch dressing, and half of the shredded cheddar and mozzarella cheeses. Mix until well combined and creamy. If too thick, add optional cream or a tablespoon of milk. Season with black pepper and garlic powder if using.
  4. Fill the pumpkin: Spoon the chicken mixture into the hollowed-out pumpkin, leaving about 1 inch of space at the top. Top with remaining shredded cheddar and mozzarella cheeses. Place the pumpkin lid back on.
  5. Bake: Place filled pumpkin on a prepared baking sheet. Bake at 375°F for 45-55 minutes, until cheese is melted and bubbly and pumpkin flesh is tender when pierced with a fork.
  6. Check for doneness: After 40 minutes, carefully remove lid and check dip. If top is browning too quickly, tent loosely with aluminum foil and continue baking. Internal temperature should reach at least 165°F.
  7. Optional jack-o-lantern face: Use a small paring knife to carve a simple face into the pumpkin skin before baking. Cut shallow lines so you don’t cut all the way through.
  8. Rest and serve: Let pumpkin sit for 5-10 minutes after removing from oven. Sprinkle sliced green onions on top.

Notes

Choose a sugar pumpkin over a carving pumpkin for best flavor and texture. Do not overfill the pumpkin—leave at least 1 inch of space. Soften cream cheese to room temperature for smooth texture. Shred your own cheese for best melting. Start checking doneness at 40 minutes. Use an instant-read thermometer to ensure dip reaches 165°F. Make extra filling to bake in a ramekin as backup.
