  • 1 cup powdered sugar (sifted)
  • 1 large egg white or 2 tablespoons meringue powder + 2 tablespoons water
  • 1/2 teaspoon lemon juice or vanilla extract (optional)
  • Wooden lollipop sticks or sturdy cake pop sticks
  • Sprinkles or edible glitter (optional)

Instructions

  1. Bake your chocolate cake according to package or recipe instructions. Let it cool completely, then crumble it finely into a large bowl (about 30 minutes including cooling).
  2. Add about 1 cup of frosting to the cake crumbs and mix with a sturdy spoon or your hands until moist enough to hold shape but not sticky. Adjust with more crumbs or frosting as needed (5-7 minutes).
  3. With clean hands, scoop a tablespoon-sized amount of cake mixture and roll into a rough oval football shape. Place each on a parchment-lined baking sheet and chill in the fridge for at least 30 minutes.
  4. Melt the candy melts or chocolate in a microwave-safe bowl in 30-second bursts, stirring in between until smooth (about 2-3 minutes). Thin with a teaspoon of vegetable oil if needed.
  5. Dip the tip of each stick into melted chocolate, then insert halfway into each chilled cake pop to secure. Return to fridge for 10 minutes to set.
  6. Holding the stick, dip the cake pop into melted chocolate, covering completely. Tap off excess chocolate and place on parchment paper or cake pop stand to set. Chill for 15-20 minutes until firm.
  7. Whisk together powdered sugar, egg white (or meringue powder & water), and lemon juice until thick but pipeable. Transfer to a piping bag with a fine tip.
  8. Pipe a horizontal line across the center of each cake pop, then pipe short vertical dashes across the line to mimic football laces. Allow icing to dry completely, about 30 minutes.
  9. Store cake pops upright in the fridge or a cool place until ready to serve.

Notes

Use dense chocolate cake crumbs for better shaping. Chill cake pops at every stage to prevent falling apart. Dip sticks in melted chocolate before inserting to secure. Practice piping on parchment paper before decorating. If cake pops fall off sticks, adjust moisture or chill longer.
