  • 1/2 cup (90g) pastel-colored sprinkles (nonpareils or small jimmies)
  • 2 tablespoons light corn syrup or honey

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, beat 1 cup softened butter with 3/4 cup granulated sugar using an electric mixer on medium speed until fluffy and pale, about 2-3 minutes.
  3. Beat in 1 large egg and 1 teaspoon vanilla extract until combined.
  4. In a separate bowl, whisk together 2 1/4 cups all-purpose flour, 1/2 teaspoon baking powder, and 1/4 teaspoon salt.
  5. Gradually add the dry mixture to the butter mixture, mixing on low speed until just combined. Do not overmix.
  6. Scoop dough into 1-inch (2.5 cm) balls and place them about 2 inches apart on the baking sheet. Use your thumb or the back of a small spoon to gently press an indentation in the center of each ball.
  7. In a small bowl, mix 1/2 cup pastel sprinkles with 2 tablespoons light corn syrup or honey until the sprinkles are lightly coated.
  8. Spoon a small amount of the sprinkle mixture into each indentation, pressing lightly to pack the sprinkles in without overflowing.
  9. Bake for 12-15 minutes, or until the cookies are lightly golden around the edges but still soft in the center.
  10. Remove from oven and let cookies cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
