  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions

  1. Rinse and drain the canned white beans thoroughly to remove excess salt. Mince the garlic, finely chop the shallot, and strip thyme leaves from the stems.
  2. Warm the olive oil over medium heat in a large skillet until shimmering but not smoking.
  3. Add the minced garlic and chopped shallot. Stir frequently until translucent and fragrant, about 3 to 4 minutes.
  4. Toss the drained beans into the skillet. Stir gently to coat with the oil and aromatics. Let them warm through for about 3 minutes, pressing lightly with the back of your spoon to break a few beans for creaminess.
  5. Slowly add the heavy cream while stirring. Bring the mixture to a gentle simmer and let it thicken slightly, about 2 minutes.
  6. Stir in the fresh thyme, salt, pepper, and red pepper flakes if using. Taste and adjust seasonings.
  7. Add the chopped baby spinach to the skillet. Stir until wilted but still vibrant green, about 1 to 2 minutes.
