Instructions

  1. Preheat your oven to 350°F (175°C). Line a rimmed baking sheet with parchment paper.
  2. Clean the pumpkin seeds thoroughly. Separate seeds from pumpkin guts, rinse in a colander under cold water, and remove any remaining pumpkin strings.
  3. Bring a small saucepan of water to a rolling boil. Add 1 teaspoon of salt to the water. Drop in the cleaned pumpkin seeds and boil for exactly 5 minutes.
  4. Drain the boiled seeds in a colander and shake off excess water. Spread them on a clean kitchen towel or paper towels and pat dry to remove surface moisture.
  5. In a medium mixing bowl, combine melted butter, honey, cinnamon (if using), vanilla extract, and a pinch of salt. Whisk until smooth and well-blended.
  6. Add the dried pumpkin seeds to the bowl with the honey mixture. Use a spatula to toss and coat every seed evenly.
  7. Pour the coated seeds onto the prepared baking sheet. Spread them into a single, even layer. Use the spatula to nudge any clumps apart.
  8. Roast for 12-15 minutes. At the 6-minute mark, pull the pan out and stir the seeds with the spatula. Watch closely during the last 3 minutes to prevent burning. Seeds are done when deep golden-brown and fragrant.
