A quick and easy charcuterie board featuring salty cured meats, creamy cheeses, and sweet-tart fall fruits, perfect for Friendsgiving or any casual gathering.

  • 6–8 slices prosciutto
  • 4–6 ounces Genoa salami or soppressata
  • 4 ounces capicola (optional)
  • 8 ounces brie (double or triple cream)
  • 6 ounces aged cheddar (e.g., Cabot or Kerrygold)
  • 4 ounces manchego
  • 4 ounces goat cheese log (optional)
  • 4–6 fresh figs, halved
  • 1 large apple (Honeycrisp or Granny Smith), sliced
  • 1 large pear (Bartlett or Bosc), sliced
  • 1/2 cup dried apricots
  • 1/4 cup fresh cranberries
  • 1/4 cup pomegranate seeds
  • 2–3 tablespoons honey
  • 1/2 cup mixed nuts (toasted almonds, walnuts, or pecans)
  • 1 box or bag crackers or crostini
  • 1/2 cup olives (Castelvetrano and Kalamata, optional)
  • Fresh rosemary sprigs for garnish

Instructions

  1. Set out your cheeses (15 minutes before serving). Remove the brie, cheddar, and manchego from the refrigerator and let them come to room temperature.
  2. Prepare your fruits. Wash and dry the figs, apple, and pear. Halve the figs lengthwise. Slice the apple and pear into thin wedges, removing the cores. Toss the apple slices in a little lemon juice to prevent browning. Rinse the fresh cranberries and pat them dry.
  3. Arrange the cheeses on the board. Place the brie whole or halved in one corner. Slice the cheddar into thin triangles or cubes and arrange them in a small cluster. Cut the manchego into thin wedges and fan them out.
  4. Add the meats. Drape the prosciutto slices in loose folds. Roll or fold the salami slices and place them near the prosciutto. If using capicola, arrange it in a small pile.
  5. Place the fruits around the board. Scatter the fig halves, apple slices, and pear wedges in small clusters. Add the dried apricots, fresh cranberries, and pomegranate seeds in little piles.
  6. Fill the small bowls. Pour the honey into one small bowl. Place the mixed nuts in another bowl, and the olives in a third if using. Position these bowls on the board.
  7. Add the crackers and garnishes. Arrange the crackers or crostini in small stacks or fans around the board. Tuck fresh rosemary sprigs between the ingredients. Drizzle a little honey over the brie or goat cheese just before serving.
  8. Final check and serve. Fill any empty gaps with extra nuts, fruit, or crackers. Serve immediately, or cover loosely with plastic wrap and refrigerate for up to 2 hours. If refrigerating, bring back to room temperature for 15 minutes before serving.

Notes

Let cheeses come to room temperature for best flavor. Toss apple slices in lemon juice to prevent browning. Prep all ingredients in advance and assemble just before serving. The board can be refrigerated for up to 2 hours after assembly; bring to room temperature before serving.
