A quick and easy one-pan dinner featuring ground turkey and sweet potatoes, caramelized to perfection with warm spices. Perfect for busy weeknights, this forgiving recipe comes together in about 30 minutes with minimal cleanup.

  • 1 lb (450g) ground turkey (93% lean)
  • 2 medium sweet potatoes (about 1 lb / 450g), peeled and diced into ½-inch cubes
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon chili powder
  • Salt and black pepper to taste
  • ¼ cup (60ml) chicken broth
  • Fresh parsley or cilantro for garnish (optional)

Instructions

  1. Prep the sweet potato: Peel and dice sweet potatoes into ½-inch cubes.
  2. Heat the skillet: Place a large skillet over medium-high heat and add 1 tablespoon olive oil. Let it get shimmery, about 2 minutes.
  3. Cook the sweet potato: Add diced sweet potato in a single layer. Cook undisturbed for 3-4 minutes to develop a golden crust, then stir and continue cooking for another 4-6 minutes until tender and browned. Transfer to a plate and set aside.
  4. Cook the aromatics: Reduce heat to medium and add remaining 1 tablespoon olive oil. Add diced onion and cook for 2 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant.
  5. Brown the turkey: Add ground turkey to the skillet. Break it up and let cook undisturbed for 2 minutes to sear, then stir and cook until no longer pink, about 3-4 minutes.
  6. Season and deglaze: Sprinkle cumin, smoked paprika, chili powder, salt, and pepper over the turkey. Stir to coat. Pour in chicken broth and scrape up browned bits from the bottom of the pan.
  7. Combine and finish: Return cooked sweet potato to the skillet. Stir gently to coat and cook for 1-2 minutes to meld flavors.
  8. Rest and serve: Remove from heat, cover loosely with foil or a lid, and let rest for 5 minutes. Garnish with fresh parsley or cilantro before serving.

Notes

Don’t overcrowd the pan; use a 12-inch skillet for best browning. For meal prep, store in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet with a splash of water or broth for best texture. Freezing is not recommended as sweet potato becomes grainy.
