  • 4 cloves garlic, minced

  • Salt and black pepper to taste
  • 4 cups broccoli florets (about 1 large head)
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon garlic powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Make the glaze: In a small bowl, whisk together ¼ cup honey, 3 tablespoons soy sauce, 4 minced garlic cloves, 1 tablespoon rice vinegar, 1 teaspoon sesame oil, and ½ teaspoon red pepper flakes (if using). Set aside.
  3. Prep the broccoli: On your baking sheet, toss the 4 cups of broccoli florets with 2 tablespoons olive oil, ½ teaspoon garlic powder, and a pinch of salt and pepper. Spread them out in a single layer.
  4. Roast the broccoli first: Pop the broccoli in the oven for 10 minutes. While that’s going, pat your salmon fillets dry with paper towels. Season them lightly with salt and pepper.
  5. Add the salmon: After 10 minutes, pull the sheet out. Push the broccoli to one side and place the salmon fillets skin-side down on the other side. Brush about half the glaze over the top of each fillet. Reserve the rest for later.
  6. Bake everything together: Return the sheet to the oven and bake for 8-10 minutes, depending on the thickness of your fillets. The salmon should be opaque and flake easily with a fork. The broccoli should be tender with crispy, browned edges. If you’re using a thermometer, aim for 145°F at the thickest part.
  7. Finish with the glaze: During the last 2 minutes of baking, brush the remaining glaze over the salmon. Watch it closely—honey can go from golden to burnt fast.
  8. Rest and serve: Let the salmon rest on the sheet for 2 minutes. Serve with lemon wedges on the side for squeezing over everything.

Notes

Pat the salmon dry for better caramelization. Add the glaze in two stages to prevent garlic from burning. Cut broccoli into uniform pieces for even roasting. Let the salmon rest for 2 minutes before serving. For thinner fillets (1 inch or less), check at 6 minutes.
