  • 3 tablespoons pure maple syrup
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher salt (plus more to taste)
  • ¼ teaspoon freshly ground black pepper (optional)

Instructions

  1. Preheat your oven to 425°F (218°C). Position a rack in the middle position and allow the oven to fully preheat for about 15 minutes.
  2. Wash the delicata squash thoroughly under cool water and pat dry. Cut off about ¼ inch from both ends and discard.
  3. Slice the squash crosswise into ½-inch thick rings. Use your fingers or a small spoon to gently push out the seeds from each ring.
  4. Place the squash rings in a mixing bowl. Add the maple syrup, olive oil, kosher salt, and black pepper if using. Use your hands to gently toss everything together until each ring is evenly coated.
  5. Line a large baking sheet (half-sheet pan, 18×13 inches) with parchment paper if desired. Spread the squash rings in a single, even layer without overlapping. Leave a little space between each ring.
  6. Roast for 10 minutes. Do not open the oven door during this time.
  7. Remove the pan from the oven. Use tongs to flip each ring over. Return the pan to the oven and roast for another 8-10 minutes, until the rings are tender when pierced with a fork and have deep golden-brown edges.
  8. Transfer the squash rings to a serving platter. Optionally, sprinkle with a pinch of flaky sea salt right before serving. Serve immediately.

Don’t skip the preheat—starting with a fully preheated oven is essential for caramelization. Half-inch thickness is the sweet spot for texture. Overcrowding the pan will cause steaming instead of caramelization. A final sprinkle of flaky salt before serving adds texture and brightness. For extra-crispy edges, try the air fryer adaptation at 375°F for 8-10 minutes. Store leftovers in an airtight container in the refrigerator for up to 4 days; reheat in a 375°F oven for 5-7 minutes or in an air fryer at 350°F for 3-4 minutes. Freezing is not recommended.
