  • 1/2 cup (1 stick, 113g) unsalted butter, melted
  • 1 cup (200g) light brown sugar, packed
  • 1 1/2 cups (150g) pecan halves
  • 1 cup (125g) all-purpose flour
  • 1/2 cup (100g) granulated sugar
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 3/4 cup (180ml) milk (whole milk preferred)
  • 1 teaspoon vanilla extract
  • Vanilla bean ice cream, for serving

Instructions

  1. Preheat your oven to 350°F (175°C). Place the rack in the center position.
  2. Melt the butter in a 10-inch cast-iron skillet in the oven or microwave. Swirl to coat the bottom evenly.
  3. Sprinkle the pecan halves evenly over the melted butter, then sprinkle the brown sugar over the pecans. Do not stir.
  4. In a medium mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt. Make a well in the center and pour in the milk and vanilla extract. Stir until just combined (a few lumps are okay).
  5. Gently spoon the batter over the pecan and brown sugar layer in dollops. Do not spread.
  6. Bake for 30-35 minutes, until the top is golden brown and a toothpick inserted into the center comes out clean or with a few moist crumbs. If browning too quickly, tent with foil for the last 10 minutes.
  7. Let the cobbler rest on a wire rack for at least 10 minutes before serving.
  8. Serve warm, topped with a generous scoop of vanilla bean ice cream.

Notes

Don’t overmix the batter; lumps are fine. For extra flavor, toast the pecans for 5-7 minutes at 350°F before using. Use room-temperature milk to prevent seizing the butter. Let the cobbler rest for at least 10 minutes to allow the caramel to set. For a gluten-free version, use a 1:1 gluten-free baking flour blend.
