These blue raspberry lemonade popsicles with a strawberry swirl are a bright, tangy, and refreshing homemade summer treat that combines tart lemonade with sweet strawberry puree for a perfect icy snack.

  • 2 cups (480 ml) blue raspberry lemonade (store-bought or homemade with natural lemonade and blue raspberry syrup)
  • 1 cup (150 g) fresh strawberries, hulled and sliced (frozen can be used, thawed and drained)
  • 2 tablespoons (25 g) granulated sugar (or honey/agave as a natural sweetener alternative)
  • 1 tablespoon (15 ml) lemon juice
  • 1/4 cup (60 ml) water
  • Optional: blue food coloring (for extra vivid blue color)

Instructions

  1. Prepare the strawberry swirl: Combine hulled and sliced strawberries, sugar, lemon juice, and water in a blender. Blend until smooth but not overly thin (about 30 seconds). Taste and adjust sweetness if needed. Set aside.
  2. Mix the blue raspberry lemonade base: In a bowl, stir together 2 cups (480 ml) of blue raspberry lemonade. If using plain lemonade, add a tablespoon of blue raspberry syrup or a drop of blue food coloring for color. Taste to check balance.
  3. Fill the molds: Pour about 1-2 tablespoons of the blue raspberry lemonade mixture into each popsicle mold, filling about one-third of the way. Add a spoonful of the strawberry puree on top.
  4. Create the swirl: Use a skewer or chopstick to gently swirl the strawberry puree into the lemonade layer, creating visible pink streaks against the blue.
  5. Repeat layering: Add another layer of blue raspberry lemonade, followed by more strawberry puree, swirling gently again. Fill molds to the top, finishing with a swirl of strawberry puree.
  6. Insert sticks and freeze: Place popsicle sticks into each mold. Freeze for at least 4-6 hours or until fully solid. For best results, freeze overnight.
  7. Unmold and serve: Briefly run warm water over the outside of the molds for a few seconds to loosen popsicles. Pull gently to remove without breaking.

Notes

Use silicone molds for easier removal. If strawberry puree is too thick to swirl, add a teaspoon or two of water to loosen. Freeze popsicles fully for best texture. Warm water bath helps release popsicles from molds. Adjust sweetness to taste. Frozen strawberries can be used if thawed and drained. Optional flavor variations include adding fresh mint, lime juice, or substituting other fruit purees.
