Instructions

  1. Make the Mint Syrup (10 minutes): Combine 1 cup water and 1/2 cup sugar in a small saucepan over medium heat. Stir occasionally until the sugar dissolves completely, about 3-5 minutes. Add fresh mint leaves, remove from heat, and let steep for 10 minutes. Strain out the leaves if you want a clear syrup, or leave them in for extra flavor.
  2. Prep the Lemonade Base (5 minutes): In a large pitcher, mix 1 cup freshly squeezed lemon juice, 1 cup water, and 2 tablespoons sugar. Stir until sugar is dissolved. Add a teaspoon of lemon zest here if using for a bright zing.
  3. Prepare Strawberries (2 minutes): Hull and halve about 2 cups of fresh strawberries. If using frozen, thaw slightly so they blend easily.
  4. Blend the Slushie (5 minutes): In the blender, add strawberries, lemonade base, 3/4 cup of the cooled mint syrup (taste and adjust if you want it more minty), and 4 cups of ice cubes. Blend on high until smooth and slushy – about 30-45 seconds. Stop and scrape down sides if needed.
  5. Adjust Sweetness & Texture: Give the slushie a quick taste. Add more mint syrup or sugar if preferred. If too thick, add a splash of water or more lemonade; if too thin, toss in more ice and pulse briefly.
  6. Serve Immediately: Pour into chilled glasses and garnish with a sprig of fresh mint or a lemon wheel for a pop of color. Enjoy right away for best texture.

Notes

Use freshly squeezed lemon juice and fresh strawberries for best flavor. Let the mint syrup steep off heat to avoid bitterness. Crushed ice blends more evenly but regular ice cubes work if blended long enough. Adjust sweetness after blending to taste. Mint syrup can be stored in the fridge for up to two weeks. Frozen strawberries can be used if thawed slightly. For a twist, swap lemon juice with lime juice or mint with basil or rosemary.
