Instructions

  1. Prepare the Pickle Chips: Slice 1 cup of dill pickles about 1/4-inch thick. Heat 1/2 inch of oil in a skillet over medium-high heat (about 350°F/175°C). Fry the pickle slices in batches for 2-3 minutes per side until golden and crisp. Remove with tongs and drain on paper towels. Set aside. (If using store-bought crispy pickle chips, skip to step 2.)
  2. Cook the Beef and Aromatics: In a large skillet, heat 2 tablespoons oil over medium heat. Add diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and cook for 30 seconds until fragrant. Add ground beef, breaking it up with a spatula. Cook for 6-8 minutes until browned and no longer pink. Season with salt, pepper, and smoked paprika. Drain excess fat if necessary.
  3. Mix the Base: In a mixing bowl, combine softened cream cheese, shredded cheddar, mayonnaise, Dijon mustard, and Worcestershire sauce. Stir until smooth and creamy.
  4. Combine Beef and Cheese Mixture: Fold the cooked beef and onions into the cheese mixture until evenly combined.
  5. Assemble the Dip: Transfer the mixture into a baking dish or oven-safe skillet. Smooth the top evenly.
  6. Melt and Brown: Place under a preheated broiler for 3-5 minutes until the cheese is bubbly and slightly golden on top. Watch carefully to avoid burning.
  7. Top with Crispy Pickle Chips: Remove from the oven and immediately sprinkle the crispy pickle chips over the hot dip to keep their crunch.
