  • 1 tablespoon olive oil (for searing)
  • 3 tablespoons unsalted butter, softened
  • 2 tablespoons honey
  • 1 teaspoon Dijon mustard
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
  • 2 tablespoons chicken broth or water
  • 1 teaspoon lemon juice
  • Salt and pepper, to taste

Instructions

  1. Pat the chicken breasts dry with paper towels. Lightly pound them to an even thickness (about 1/2 inch / 1.3 cm) for uniform cooking. Season both sides generously with salt and pepper.
  2. In a small bowl, mix softened butter, honey, and Dijon mustard until smooth. Set aside.
  3. Warm olive oil over medium heat in a heavy-bottomed skillet until shimmering but not smoking (about 2 minutes).
  4. Place chicken breasts in the skillet. Cook without moving for 5 minutes or until golden brown and easy to flip. Flip carefully and cook the other side for 4 minutes.
  5. Lower the heat to medium-low. Spoon the honey butter glaze over each chicken breast. Let it melt and bubble gently, spooning the glaze over the chicken a few times for a shiny, sticky coating. Cook for another 2-3 minutes until cooked through (internal temp 165°F / 74°C).
  6. While the chicken finishes, in a separate small pan or the same skillet after removing chicken, sauté minced garlic in a teaspoon of butter or olive oil over low heat for about 30 seconds until fragrant.
  7. Add chopped parsley, thyme, chicken broth, and lemon juice. Stir gently and simmer for 2 minutes until slightly reduced. Season with salt and pepper to taste.
  8. Transfer chicken to plates and drizzle with the garlic herb sauce. Let chicken rest for a couple of minutes before serving.

Notes

Keep the heat medium-low when adding the honey butter glaze to avoid burning. Spoon the glaze continuously over the chicken for a glossy finish. Use a meat thermometer to ensure chicken reaches 165°F (74°C). Let the chicken rest before serving to seal in juices. For dairy-free, substitute butter with coconut oil and omit Dijon mustard if sensitive.
