These smoky, cheesy football-shaped stuffed biscuits combine bold flavors of smoked jalapeños and sharp cheddar in a tender, buttery biscuit dough, perfect for game day appetizers.

  • 1 tbsp baking powder
  • 1 tsp sugar
  • ¾ tsp salt
  • ½ cup (113 g) cold unsalted butter, cubed
  • ¾ cup (180 ml) whole milk, room temperature (can substitute buttermilk)
  • 3 large smoked jalapeños, finely chopped
  • 1 ½ cups (170 g) shredded sharp cheddar cheese
  • 4 oz (115 g) softened cream cheese
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • 1 large egg beaten with 1 tbsp water (egg wash)
  • Pinch of coarse sea salt

Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a large bowl, whisk together flour, baking powder, sugar, and salt.
  3. Cut cold, cubed butter into the flour mixture using a pastry cutter or fork until it resembles coarse crumbs with some pea-sized bits.
  4. Pour in the milk and stir gently until the dough just comes together; do not overmix.
  5. In a separate bowl, combine shredded cheddar, softened cream cheese, chopped smoked jalapeños, garlic powder, onion powder, and smoked paprika until creamy and well mixed.
  6. Turn dough onto a lightly floured surface and pat into a ¾ inch (2 cm) thick rectangle.
  7. Spread the cheese and jalapeño filling evenly over the dough to the edges.
  8. Roll the dough into a log, sealing edges as best as possible.
  9. Slice the log into 8 equal sections and shape each slice by hand into a rough football shape by tapering the ends and pinching the tips.
  10. Place the shaped biscuits on the baking sheet about 1 inch (2.5 cm) apart.
  11. Brush the tops with egg wash and sprinkle lightly with coarse sea salt.
  12. Bake for 15–18 minutes until golden brown, shiny, and puffed.
  13. Let the biscuits rest on the baking sheet for 5 minutes before serving to allow the filling to set.

Keep butter cold to ensure flaky layers. Do not overwork the dough to avoid toughness. Use real smoked jalapeños for authentic smoky flavor. Shape biscuits by hand for best football look. Freeze shaped biscuits for make-ahead convenience, adding 3-5 minutes to baking time when baking from frozen. Avoid microwaving leftovers to prevent rubbery texture.
