Instructions

  1. Brown the butter: Melt 1/2 cup unsalted butter over medium heat in a heatproof bowl or small saucepan, stirring frequently until it foams and turns golden brown with a nutty aroma. Remove from heat and let cool for 5 minutes.
  2. Mix sugar and eggs: Add 1 cup granulated sugar to the browned butter and whisk until combined. Add 2 eggs one at a time, whisking well after each addition until glossy.
  3. Add bananas and vanilla: Mash 3 ripe bananas and stir into the mixture along with 1 teaspoon vanilla extract until evenly incorporated.
  4. Combine dry ingredients: In a separate bowl, whisk together 1 3/4 cups all-purpose flour, 1 teaspoon baking soda, and 1/2 teaspoon salt.
  5. Incorporate dry into wet: Gradually fold the dry ingredients into the wet banana mixture using a rubber spatula, mixing just until combined to avoid toughness.
  6. Add walnuts: Gently fold in 1/2 cup toasted chopped walnuts, reserving a small handful for topping.
  7. Prepare pan and pour batter: Grease a 9×5 inch loaf pan or line with parchment paper. Pour batter evenly into the pan, sprinkle reserved walnuts on top, and finish with 1/4 teaspoon flaky sea salt.
