  • 8 ounces cream cheese, softened
  • 1/2 cup sour cream
  • 1/2 cup mayonnaise (preferably Hellmann’s or Duke’s)
  • 1 cup frozen chopped spinach, thawed and squeezed dry
  • 1 can (14 ounces) artichoke hearts, drained and chopped (packed in water)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1/4 cup finely diced yellow onion
  • 1/4 teaspoon red pepper flakes
  • Salt and black pepper to taste
  • Optional: 1/4 cup shredded provolone or Monterey Jack cheese for topping

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the spinach: Thaw frozen spinach completely, then place in a clean kitchen towel or paper towels and squeeze out as much liquid as possible.
  3. Drain and chop the artichokes: Rinse artichoke hearts, give them a rough chop, and pat dry with a paper towel.
  4. Sauté the aromatics: Heat a small skillet over medium heat with a drizzle of olive oil. Add minced garlic and diced onion, cook for 2-3 minutes until onion is translucent and garlic is fragrant. Do not let garlic brown. Remove from heat and set aside.
  5. Mix the creamy base: In a large mixing bowl, combine softened cream cheese, sour cream, and mayonnaise. Blend until smooth and completely combined.
  6. Add the cheeses: Stir in shredded mozzarella and grated Parmesan until evenly distributed.
  7. Fold in the vegetables: Add squeezed-dry spinach, chopped artichokes, sautéed garlic and onion, red pepper flakes, a pinch of salt, and black pepper. Fold gently until evenly dispersed.
  8. Transfer to baking dish: Spoon mixture into a 1.5-quart baking dish or 9-inch pie plate and spread into an even layer. If using optional provolone or Monterey Jack, sprinkle on top.
  9. Bake until bubbly: Place dish in preheated oven and bake for 20-25 minutes, until hot all the way through and top is golden brown and bubbling around the edges.
  10. Rest and serve: Let dip cool for 5 minutes before serving. Serve warm with tortilla chips, crusty bread, crackers, or fresh veggies.

Notes

Don’t skip squeezing the spinach dry – excess water is the enemy of creamy dip. Use room temperature cream cheese to avoid lumps. Go easy on salt since Parmesan and artichokes are naturally salty. Watch the baking time to prevent the cream cheese from separating. This dip can be assembled up to 24 hours ahead and refrigerated before baking (add 5-10 minutes to baking time). Leftovers keep in the refrigerator for up to 4 days. Not recommended for freezing.
