  • 1/2 cup (60g) walnuts, chopped and toasted
  • 1/4 cup (50g) brown sugar, packed
  • 2 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter, cold and cubed
  • 1/2 teaspoon ground cinnamon (optional)

Instructions

  1. Brown the Butter: In a small saucepan over medium heat, melt the butter. Stir frequently as it foams and turns golden brown with a nutty aroma (about 5-7 minutes). Watch closely to avoid burning. Once browned, remove from heat and let cool slightly.
  2. Toast the Walnuts: While the butter cools, toast the chopped walnuts in a dry skillet over medium heat, stirring often until fragrant and lightly browned (about 3-4 minutes). Set aside.
  3. Make the Streusel: In a small bowl, combine brown sugar, flour, cinnamon, and toasted walnuts. Cut in cold butter cubes with your fingers or a fork until the mixture resembles coarse crumbs. Chill in the fridge while preparing the batter.
  4. Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease or line your 9×5 inch loaf pan with parchment paper, leaving an overhang for easy removal.
  5. Mix Wet Ingredients: In a large mixing bowl, whisk together mashed bananas, browned butter, and sugar until combined. Add eggs one at a time, whisking well after each. Stir in vanilla extract and sour cream.
