  • 3/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg, room temperature
  • 1 teaspoon vanilla extract
  • 1/2 cup apple cider (unfiltered, fresh)
  • 2 cups whole wheat pastry flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg (optional)
  • For the Cinnamon Sugar Coating:
  • 1/4 cup granulated sugar
  • 1 tablespoon ground cinnamon
  • 2 tablespoons unsalted butter, melted

Instructions

  1. Preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats.
  2. In a large bowl, beat softened butter, brown sugar, and granulated sugar together until light and fluffy, about 2-3 minutes with a hand mixer on medium speed. Scrape down sides as needed.
  3. Beat in egg and vanilla extract until well combined. Slowly pour in apple cider and mix on low until just incorporated.
  4. In a separate bowl, whisk together whole wheat pastry flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add dry ingredients to wet mixture, mixing on low or folding with a spatula until flour just disappears. Dough will be soft and slightly sticky.
  6. Using a cookie scoop or tablespoon, drop rounded balls of dough onto prepared baking sheets, spacing 2 inches apart. Bake for 10-12 minutes, until edges are set and lightly golden but centers still look soft.
  7. While cookies bake, melt 2 tablespoons butter in a small bowl. In another small bowl, whisk together 1/4 cup granulated sugar and 1 tablespoon cinnamon.
  8. Let baked cookies cool on baking sheet for 2 minutes. Working one at a time, brush top of each warm cookie with melted butter and dip into cinnamon sugar mixture. Place coated cookies on a cooling rack.

Notes

Don’t overmix the dough to avoid tough cookies. Use room temperature ingredients for best results. Fresh unfiltered apple cider provides the strongest flavor. Pull cookies from oven when edges are set but centers still look slightly underdone for soft texture. For gluten-free, use a 1:1 gluten-free baking flour blend. For dairy-free, use vegan butter. Cookies can be stored in an airtight container at room temperature for up to 4 days or frozen for up to 3 months.
