  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil
  • For the glaze:
  • 3 tablespoons ketchup
  • 1 tablespoon brown sugar (or honey)
  • 1 teaspoon apple cider vinegar

Instructions

  1. Preheat your oven to 375°F (190°C). Generously grease a 12-cup muffin tin with cooking spray or butter.
  2. Sauté the aromatics: Heat 1 tablespoon olive oil in a small skillet over medium heat. Add the grated onion and carrot, and cook for 3-4 minutes until softened and fragrant. Add the minced garlic and cook for 30 seconds more. Let this cool for a few minutes.
  3. Mix the wet ingredients: In a large bowl, whisk together the egg, milk, 2 tablespoons ketchup, and Worcestershire sauce until smooth.
