  • 1 medium yellow onion, diced (about 1 cup)
  • 4 cloves garlic, minced
  • 1 jalapeño, seeded and minced
  • 1 can (15 oz) fire-roasted diced tomatoes
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn kernels, drained (or 1.5 cups frozen corn)
  • 4 cups low-sodium chicken broth
  • 1 tablespoon tomato paste
  • 34 limes, juiced (about 1/3 cup fresh lime juice)
  • 1 teaspoon lime zest
  • 1 tablespoon ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • Salt and black pepper to taste
  • Tortilla chips or strips (for topping)
  • 1 avocado, diced (for topping)
  • 1/2 cup fresh cilantro, chopped (for topping)
  • 1/2 cup shredded Mexican blend cheese or cotija cheese (for topping)
  • Sour cream or Greek yogurt (for topping)
  • Lime wedges (for serving)

Instructions

  1. Prep the aromatics: Dice the onion, mince the garlic, and seed and mince the jalapeño.
  2. Layer the ingredients in the slow cooker: Place the chicken at the bottom. Add onion, garlic, jalapeño, fire-roasted tomatoes, black beans, corn, and tomato paste on top.
  3. Add the broth and spices: Pour chicken broth over everything. Add cumin, chili powder, smoked paprika, oregano, salt, and pepper. Stir gently.
  4. Slow cook: Cover and cook on high for 3-4 hours or on low for 6-8 hours until chicken is tender.
  5. Shred the chicken: Remove chicken and shred with two forks, or shred directly in the slow cooker.
  6. Add the lime juice and zest: Turn off the slow cooker. Stir in fresh lime juice and zest.
  7. Taste and adjust: Adjust salt, lime, or spices to preference.
  8. Prepare the toppings: Dice avocado, chop cilantro, crush tortilla chips, and set out cheese and sour cream.
  9. Serve: Ladle soup into bowls. Top with tortilla chips, avocado, cilantro, cheese, and sour cream. Serve with lime wedges.

Notes

Add lime juice at the end to keep it bright. For a stovetop version, simmer for 30-40 minutes. Leftovers keep for up to 5 days in the fridge or 3 months in the freezer.
