  • 1/2 cup (113g) unsalted butter, softened
  • 1/2 cup (100g) packed dark brown sugar
  • 1/4 cup (60ml) heavy cream
  • 2 large eggs, room temperature
  • 1 teaspoon pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1 cup old-fashioned oats
  • 1/2 cup all-purpose flour
  • 1/2 cup packed dark brown sugar
  • 1/2 cup (113g) unsalted butter, melted
  • 1 cup chopped pecans
  • 1 cup mini marshmallows (optional)

Instructions

  1. Preheat oven to 400°F (200°C). Wash sweet potatoes and poke them several times with a fork.
  2. Roast potatoes directly on the oven rack or on a lined baking sheet for 45-60 minutes until soft all the way through. Let cool for 20 minutes.
  3. Cut potatoes in half and scoop flesh into a large mixing bowl, discarding skins.
  4. Add softened butter, brown sugar, heavy cream, eggs, vanilla, cinnamon, nutmeg, and salt to the bowl.
  5. Mix until smooth and creamy, ensuring no large lumps remain.
  6. Transfer the sweet potato mixture to a 9×13 inch baking dish and spread evenly.
  7. In a medium bowl, combine oats, flour, brown sugar, and chopped pecans.
  8. Pour in melted butter and stir until the mixture resembles wet sand and clumps together.
  9. Spread the topping evenly over the sweet potato layer.
  10. Sprinkle mini marshmallows over the topping if using.
  11. Reduce oven temperature to 350°F (175°C). Bake for 25-30 minutes until topping is golden brown and marshmallows are puffed.
  12. If topping browns too quickly, tent loosely with aluminum foil.
  13. Remove from oven and let rest for 10 minutes before serving.

Notes

Roasting the potatoes instead of boiling concentrates natural sugars and improves flavor. Ensure potatoes are fully cooled before mashing to prevent a watery casserole.
