Ingredients

Scale
  • ½ cup (113g) unsalted butter, softened
  • 1 cup (200g) granulated sugar
  • 1 large egg, at room temperature
  • 1 teaspoon vanilla extract
  • ½ cup (48g) black cocoa powder
  • 1 cup (125g) all-purpose flour
  • ½ teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • ½ cup (60g) powdered sugar, for rolling

Instructions

  1. Cream the butter and sugar: In a large bowl, beat the softened butter and granulated sugar together on medium speed for 2-3 minutes until light and fluffy. Scrape down the sides of the bowl halfway through.
  2. Add the egg and vanilla: Beat in the room-temperature egg and vanilla extract on medium speed until fully combined, about 1 minute.
  3. Combine the dry ingredients: In a separate bowl, whisk together the black cocoa powder, all-purpose flour, baking powder, and salt for about 20 seconds.
  4. Mix wet and dry: Add the dry ingredients to the wet mixture in two additions, mixing on low speed after each just until no flour streaks remain. Do not overmix.
  5. Chill the dough: Cover the bowl with plastic wrap and refrigerate for at least 2 hours, or up to 3 days.
  6. Preheat and prep: When ready to bake, preheat oven to 350°F (175°C). Line two baking sheets with parchment paper or silicone mats. Pour the powdered sugar into a small bowl.
  7. Roll and coat: Using a 1.5-tablespoon cookie scoop or your hands, roll the chilled dough into 1-inch balls. Drop each ball into the powdered sugar and roll around to coat generously. Place 2 inches apart on prepared baking sheets.
  8. Bake: Bake for 10-12 minutes. The cookies will look puffed and the tops will have cracked open. For softer cookies, bake for 10 minutes; for firmer, go to 12.
  9. Cool properly: Let the cookies cool on the baking sheet for 5 minutes before transferring to a wire rack. Cool completely before storing.

Notes

Chilling the dough is non-negotiable for the crinkle effect. Roll generously in powdered sugar for the best contrast. Bake one sheet at a time for even results. For softer cookies, bake for 10 minutes; for firmer, 12 minutes. The dough can be refrigerated for up to 3 days or frozen for up to 3 months.
