Instructions

  1. Pat the chicken thighs dry with paper towels. Season both sides lightly with salt and pepper.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, ketchup, rice vinegar, and sesame oil.
  3. Place chicken thighs in a single layer at the bottom of a 4-6 quart crockpot. Pour the sauce over the top.
  4. Cook on low for 4-5 hours or on high for 2.5-3 hours, until chicken is tender and reaches an internal temperature of 165°F.
