  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup (85g) semi-sweet chocolate chips or chunks
  • Flaky sea salt for topping (optional)

Instructions

  1. Preheat oven to 350°F (175°C). If using cast iron, place skillet in oven to preheat.
  2. In a mixing bowl, cream softened butter, granulated sugar, and brown sugar until light and fluffy (2-3 minutes).
  3. Mix in egg yolk and vanilla extract until combined.
  4. In a separate bowl, whisk flour, baking soda, and salt. Gently fold dry ingredients into wet mixture until just combined.
  5. Fold in chocolate chips. If dough is sticky, chill for 10 minutes.
  6. Press dough evenly into the skillet (remove from oven if preheated).
  7. Bake for 12-15 minutes until edges are golden brown and center is still soft.
  8. Cool for 5 minutes. Sprinkle with flaky sea salt if desired. Serve warm.

Notes

The secret to the gooey texture is the rest time; letting the dough rest in the fridge for up to 24 hours improves flavor and texture. Do not overbake; the center should look slightly underbaked as it will firm up while cooling. For gluten-free, use a 1:1 gluten-free flour blend. For vegan, use vegan butter and a flax egg.
